Just had a second go at this: A little less oil, and cooking for exactly an hour at 160 fan, not the original 170.

Purrfection!
How much less oil and do you reckon rapeseed oil would work as a substitute? :)

I did try to find an alternative to oil in carrot cake recipes but to no real avail.

Only about 10ml .... made the diff between it being visibly oily and simply "moist".

Can't see why any other veg oil wouldn't work :)
