Silvercrest with receiver DVB-S SL65, 80 cm dish with twin LNB.
My Location
Swindon, Wiltshire, UK
What satellite do I need to be able to receive signal from spanish speaking countries?
ie Chile, Spain.

You won't get much from Chile, but Spanish Channels are on Hispasat at 30W, Hotbird at 13E and Astra 1 at 19.2E.

The link shows the FTA Channels and if you look closer at listings sites like flysat, lyngsat, kingofsat etc you will also find details of Subscription Packages.

All should be receivable with your current dish and the SL65 will cope happily with the FTA Channels.

There's almost nothing free-to-air from Spain, except a few regionals that don't show anything much worth watching (see the link in Tivú's post). For south american stuff there's 40ºW and 55ºW in C-band but you will need at least a 1.5m dish to get any of that.
