As most HD streaming units require 2 x cat 5/6. Also for the sake of a bit of cable I'd go mad and run everything I could ever think about running in.
I'd run 3 especially to main rooms.
Yes Sky lnbs can be used, they have preseted nodges that the lnb clicks into. The thinnest lnb's the better check the specs, no problems using different lnbs on diseq switch they all do the same thing.
Best bet is to keep cable runs to a minimum. Which is closer to the dish and aerial I presume the attic, so in there will be fine. go for a 5/12.

Just finished a system where we had 3 hd boxes 1 sly box, aerial, fm and CCTV all fed threw the same system using sly eyes. HD over cat5 to each main room from one of the HD boxes. There were 16 points in total.
But definatley run 2 x Cat5 and 3 if you can to each room. Also think about home...
